Apple cake

Serves approx. 12
Pastry base:
150 g butter or margarine
150 g sugar
2 tsp vanilla sugar
3 eggs
Juice of half a lemon
150 g plain flour
1/2 tsp baking powder
Topping:
650 g sharp dessert or cooking apples
Icing sugar or apricot jam
Method:
1. Cream together the butter or
margarine, sugar and vanilla sugar,
then mix in the eggs one at a time.
2. Sift the baking powder and flour
together and fold into the creamed
mixture together with the lemon juice.
Spoon into a greased and floured
springform cake tin (C 26 cm).
3. Peel, quarter and core the apples.
Make several cuts into the top of each
quarter and gently press into the cake
mixture. Bake until golden.
4. Leave to cool to room temperature,
then dust with icing sugar or spread a
little apricot jam over the top.

Temperature: 150-170°C

Duration: 55-65 minutes
or:
Conventional heat
Temperature: 160-180 °C
Shelf level: 2
Duration: 55-65 minutes
