Ingredients
500 g haddock
Juice of 1 lemon
Salt
250 ml fi sh stock
125 ml white wine
200 g soup greens
Sauce:
3 medium egg yolks
3 tbsp fi sh stock
3 tbsp white wine
1 tsp hot mustard
2 tbsp wholegrain mustard
2 tbsp double cream
Pepper, salt, sugar
White wine
>> Tip:
Mustard grain is a European spice,
used principally in the preparation
of mustard sauces, marinades and
salads, but can also be served with
sausage, fi sh and meat.

Haddock in a mustard sauce

Serves 4

Clean, and salt the fi sh then
drizzle with lemon juice.

Wash the soup greens and
chop fi nely.

Place the fi sh with the soup
greens, fi sh stock and white
wine in a solid cooking con-
tainer and cook (see below for
settings).

Beat the egg yolks, fi sh stock
and white wine to a foam
over a bain marie. Fold the mus-
tard and cream into the mixture
and season with salt, pepper,
sugar and white wine to taste.

Serve with dill potatoes and
cucumber salad.
