Ingredients
Pastry:
125 g plain fl our
40 ml water
50 g butter
Filling:
25 g streaky bacon, diced
fi nely
75 g ham, diced small
100 g cooked ham, diced
fi nely
1 small garlic clove
25 g butter
100 g grated Gouda
100 g grated Emmental
125 ml double cream
2 medium eggs
Nutmeg
25 g frozen parsley
1 pinch salt

Ham and bacon quiche

Serves 4

Knead the pastry ingredients
until they form an elastic
dough. Place in the refrigerator
to relax.

Heat the butter in a frying
pan and sweat the
bacon, ham and cooked ham.
Add the fi nely chopped garlic.

Mix the cream, eggs,
nutmeg, salt and parsley
together.

Roll the pastry out thinly and
line the quiche or pizza dish.
Draw the edges up high.

Distribute the ham evenly
over the pastry, sprinkle with
cheese and pour the cream over.
Place on the rack and bake (see
below for settings).

Do not allow the quiche
to stand with the cream
mixture on it, as the pastry will
become soggy.
