Bakes/gratin
Potato gratin in a mustard
sauce
Serves approx. 4
800 g potatoes
Salt and pepper
1 onion, finely diced
1 clove of garlic, finely diced
30 g butter
2 tbsp coarse grained mustard
250 ml vegetable stock (instant)
A few strands of saffron
125 ml double cream
100 g grated Cheddar cheese
Method:
1. Peel and slice the potatoes, and
parboil in salted water for about 5
minutes. Drain and arrange in a
greased ovenproof dish (C 28 cm).
2. Fry the onions and garlic gently in
butter. Add the mustard, stock, saffron
and cream, and bring to the boil.
Season with salt and pepper.
3. Pour the sauce over the potatoes,
sprinkle with grated cheese, then bake
uncovered in the oven.
