Prep time 5 mins
Rising time – 1 ½ hours
Cook time – 30 mins
500g strong white bread flour
1 x 7g sachet fast action dried yeast
1 tsp salt
Pinch sugar
330ml lukewarm water
Oil for greasing
1 egg, beaten for glazing (optional)
Place all the ingredients into the bowl, fit the dough hooks and begin gentle mixing on
Speed 3-4 until a dough ball is formed.
Continue kneading the dough for approx 5 mins on speed 3-4 until smooth and elastic.
Remove the dough from the bowl.

it is coated lightly in the oil.
Cover the bowl with food wrap and leave in a warm place for approx 1 hour until doubled
in size.
Remove the dough from the bowl and lightly knead on a floury surface removing all the
air.
Drop the dough into a loaf tin, again leaving to rise for a further half hour to ¾ until
doubled in size. You do not have to cover at this stage.
Preheat the oven to 220°c, 200°c fan, gas 7.
Carefully brush the top of the beaten egg, then bake in the hot oven for 30 minutes.
Tip the hot bread out of the loaf tin and allow to cool on a wire rack.

125g butter, diced
100g caster sugar
150g light brown soft sugar
1 large egg
1 tsp vanilla extract
150g plain flour
pinch salt
½ tsp bicarbonate of soda
100g milk chocolate, chopped into small chunks
100g dark chocolate, chopped into small chunks

Mix the flour, salt and bicarbonate of soda together in a bowl, then tip into the cookie

Line a large baking tray or 2 smaller trays with baking parchment.
Remove the cookie dough from the fridge.
Break off small pieces of the dough.

simply weigh 1 amount (roughly 50g) then ensure all the rest are roughly this size.
Role into a ball and gently press to slightly flatten.
Place onto the lined tray, ensuring you space these apart well. Cookies will spread out
during baking.
Place the tray into the hot oven and bake approx 10- 12 mins until the edges are
beginning to brown.
Remove from the oven and leave to cool for a few minutes before removing to a wire rack
to cool completely.
