Salmon lasagne

Serves 4
400 g lightly smoked or fresh salmon,
thinly sliced
Approx. 12 sheets of lasagne, not
pre-cooked
2 onions, diced
20 g butter
2 tbsp flour
600 ml milk
300 ml double cream
Salt and pepper
2 dsp fresh dill, chopped
3 tbsp lemon juice
1 finely shredded fennel bulb
100 g Cheddar, grated
Method:
1. Lightly fry the onions in butter. Add
the flour, mixing well. Keep stirring,
whilst you add the milk and cream.
Season liberally with salt, pepper and
lemon juice. Simmer for 10 minutes.
Then stir in the dill.
2. Spread some of the sauce over the
bottom of an oven-proof dish. Place 4
sheets of lasagne on top, followed by a
layer of salmon and fennel. Build up a
further layer of sauce, lasagne, salmon
and fennel. Top with the rest of the
lasagne and finally the remaining
sauce. Sprinkle with grated cheese
before baking in the oven uncovered.
