Marble cake
Serves 18
250 g butter or margarine
200 g sugar
2 tsp vanilla sugar
4 eggs
4 tbsp rum
500 g flour
3 tsp baking powder
3 tbsp cocoa powder
3 tbsp milk
Method:
1. Cream the butter or margarine,
sugar, vanilla sugar and eggs together.
Stir in the rum and then fold in the flour
and baking powder.
2. Stir the cocoa power and milk into
about 1/3 of the mixture.
3. Spoon about 1/2 of the remaining
plain mixture into a greased and floured
ring tin (C 26 cm). Add the
cocoa-flavoured mixture and finally the
rest of the plain mixture.
4. Swirl a fork through the mixture to
give a marbled effect, and bake.
