• Clean, soak shells.
• Stagger shells that are layered.
• Cook until shells are opened.
• Use tongs to remove.
• To steam larger littleneck or
chorrystono clams (up to 2_'/
7 cm across), use "Med" water
level; steam 1 dozen at a time;
stir after 15rains.
• Arrange in single layer, over
steam holes as much as
possible; larger quantity must
be layered.
• Larger scallops and/or larger
amount may take maximum time.
• Stir after 7 and 10 rains.
• Steam until opaque.
