III. INSTRUCTIONS FOR USE
This appliance is intended for industrial use, and must only
be used by trained staff.
1.
INTRODUCTION
The appliance shall be used exclusively for the purpose for which
it has been made, this means for the preserving of hot food.
Any other use is therefore to be considered improper.
• Our appliances have been designed and optimised by means
of laboratory tests to guarantee high levels of performance and
efficiency. However, to save energy (electricity, gas and water)
avoid using the appliance under no-load conditions or conditions
that impair optimal operation (e.g. with the doors/lids open).
Also, when possible, pre-heat the appliance before use.
Attention
The appliance should be not operated if there is no water in the
tank.
2.
OPERATION
• Fill the tank until the water level reaches the mark on the back
wall.
• Turn on the power at the mains.
• Turn
the thermostat knob "C" clockwise to the position
corresponding to the desired cooking temperature which ranges
between 30 and 90 °C. When lighting of the green pilot lamp
indicates that the appliance is under tension.
The lighting of the yellow pilot lamp indicates that the heating
elements are working. When the selected temperature has been
reached the lamp will turn off.

SWITCHING OFF
• Turn the appliance control knobs to the "off" position.
• Switch off the appliance at the mains.

WATER DRAIN (Fig. 3)
• Connect the drain hose "H" to the drain outlet and turn it
downwards to block it.
• Place a tray under the drain hose to collect the water.
• Turn the knob "F" counterclockwise and, at the same time,
push the lever "G" to the left in order to drain off.

CLEANING AND SERVICING
Before proceeding with any cleaning or maintenance opera-
tions, make sure that the power supply is disconnected at the
mains.
• To reduce the emission of harmful subtances into the
atmosphere, clean the appliance (externally, and internally when
necessary) with products featuring over 90% biodegradability.
• Clean the stainless steel surfaces daily with warm water and a
neutral soap, rinse thoroughly and dry carefully.
The cleaning of the said surfaces should never be effectuated
using aggressive detergents, common wire wool, brushes or
similar implements.
• If the appliance is not going to be used for an extended period
then the following precautions should be observed:
- Disconnect the power supply.
- Apply a protective film of Vaseline oil on the stainless steel
surfaces.
- Make sure that the premises is aired regularly.
Caution
• Do not wash the appliance with direct or high pressure water
jets.
• For the cleaning of the appliance do not use products containing
chlorine, bleach, chloric acid etc. even if diluted.
• Do not use corrosive substances such as hydrochloric acid
when cleaning the pavement surrounding the appliance.
• When scrapping the appliance, onbserve all regulations
governing waste displosal in the country of installation.
• Our appliances are manufactured using more than 90 % metal
(stainless steel, iron, aluminium, galvanaised sheet metal) and
therefore these may be recycled in conventioanl waste recovery
sites in compliance with current standards in the country of
installation.
• Render the appliance completely inoperative by removing the
power cable and any other closure device (where fitted) to avoid
the risk of children being trapped inside.
