Important
Weather conditions such as temperature, altitude or accuracy
in measuring can affect the outcome of a loaf. In order to
allow you to compensate we have created each recipe with a
liquid range.
We recommend you start with the smaller amount of liquid.
Allow unit to mix for a few minutes before checking the dough
consistency. If the dough is dense, irregularly shaped or the
unit is making a knocking noise, add 1 tablespoon of water at
a time until the dough is soft and pliable.
Do not exceed 4V4 cups dry ingredients.

The manual does not explicitly state whether the paddle can be removed from the dough just before the baking cycle. However, it does mention that the cover may be opened to add ingredients at the indicated time and that dough can be adjusted during the first kneading cycle.
