• Spread a layer of oil (2mm) in the tank and heat at minimum
until drying it;
• Clean the braiser thoroughly, drying it.
Duomat steel bottom appliances:
Before use, carefully clean any industrial greases from the
tank, proceeding as follows:
• fill the tank with water and normal detergent and bring to boil
for a few minutes.
• empty and rinse thoroughly with clean water.
CAUTION
Preheating dry with the lid lowered could
cause intervention of the limiter.

• Turn on the automatic switch installed ahead of the
appliance and open the water tap;
• Open the braiser lid;
• Keep button "A" (cold water) / "B" (hot water, if present),
pressed to fill the braiser tank with water;
• The water will come out from dispenser "E".

The burner ignition knob "V" (on front panel) has 3 positions
(see Fig. 8):
0
"Off"
80...300:
"Temperature between 80 and 300℃"

The green indicator "G" signals that the power is on.
The yellow indicator "B" signals the heating phase.
The red indicator "R" signals that the machine goes in
shutdown status.
The button "P" reactivate the lighting procedure.

Switching ON

1. Turn the knob "V" clockwise to activate the automatic
lighting procedure.
2. The lighting system will carry out up to 5 attempts, after
which, if the burner is not lit, the machine goes in
shutdown status and the red indicator "R" on the control
panel lights up.
3. Press button "P" on the control panel to reactivate the
lighting procedure.
NOTE!
To check burner lighting, it is possible to look
through the hole on the control panel
4. Turn the knob "V" to set the required temperature.
5. Turn the knob "V" past the limit of 300℃ to adjust the
liquid boiling level.
IMPORTANT
A safety device prevents lighting of the main burner
if the braiser tank is not completely lowered.
Switching OFF
• Turn the knob "V" to position "Off".

1. Turn the knob "V" clockwise to activate heating and set the
required temperature;
2. Turn the knob "V" past the limit of 300℃ to adjust the
liquid boiling level, depending on the quantity and quality
of food to be cooked.
