    Preparing and Using Your Smoker Before cooking with your Smoker, the following steps should be closely followed to both cure the finish and season the interior steel. Failure to properly follow these steps may damage the finish and/or impart metallic flavors to your first foods.

    COOKING TIPS Building Your Fire Stack charcoal briquettes or wood into a pyramid-shaped pile on top of the charcoal grate or ash pan. We recommend using 4 pounds (approximately 60 briquettes) to start your fire, adding more as needed. If using lighter fluid, saturate the charcoal briquettes with lighter fluid and let it soak in for approximately 5 minutes.

    GRILL MAINTENANCE Frequency of cleanup is determined by how much your smoker is used. Make sure coals are completely extinguished before cleaning inside of smoker. Inside surfaces may be cleaned with a strong solution of detergent and water applied with a scrub brush. Thoroughly rinse with water and allow to air dry before using again. If a bristle brush is used to clean any of the grill cooking surfaces, ensure no loose bristles remain on cooking surfaces prior to grilling.

    ASSEMBLY FIRST, GET A HELPER! This unit is heavy and requires a second person for lifting and moving. NEXT, pick a suitable location to work. Open the carton and slit the corners so that the carton lays flat. This will give you a protective surface during assembly.
  • Page 9 With unit still in position from previous steps, Install the Bottom Shelf to the four legs using 4 each 1/4-20x 2 ½"and 1/4-20 flange nuts. Note - Grill Lid Next, securely tighten all leg screws and bottom shelf screws. not shown for clarity.
  • Page 10 With the assistance of a helper, place the firebox onto the smoker chamber while aligning the firebox opening with the smoke chamber opening as shown. Secure the firebox using 6 each 1/4-20x1/2" screws and six each 1/4- Firebox 20 flange nuts. Insert the screws from inside the firebox as shown. 1/4-20x1/2"...
  • Page 11 Attach the Handle Assembly to the Grill Lid using 4 each 1/4-20x1/2" screws and 4 each 1/4-20 flange nuts as shown below. Insert the screws from outside the lid. In the same manner - attach the Handle Assembly to the Firebox Lid. Tighten all hardware secuely.
  • Page 12 Hang the grease cup clip from the holes on the bottom RH side of the smoke chamber. A 12 ounce soup can (not provided) will work nicely to collect grease drippings from the smoke chamber. Place two wire fire grates into the smoke chamber. Next, place three Cast Iron Cooking Grates into the Smoke chamber.
