INSIDER'S
GUIDE TO EASY BAKING
(cont'd.)
Ingredient Temperature: Ingredients must be at the temperature
specified in recipe. Butter/margarine that is too cold, and not at
room temperature, will not cream with sugar when making cookie
dough. Pie crust, in contrast, must only be made with very cold
butter/margarineso that it can be cut into the flour and not
creamed. This is what makes cookies soft and pie crust flaky.
Follow the simple detailed recipes that begin on the next page.

Remember
when dieters declined bread because it was
starchy and fattening? Well, nutritionists
won a reprieve
for bread when they reminded
us that it's comprised
of
complex carbohydrates
and full of fiber. In fact, four old
friends -- bread, cereal, rice and pasta -- form the
foundation
of the USDRs current
"Eating Right" pyramid. Six to
eleven servings are recom-
mended daily.
How refreshing
to
know we can indulge
in the ultimate
com-
fort food without
guilt. We certainly
owe thanks to those
who insisted, "Let

them eat bread!"
