The appliance has three support grids and can be
equipped with Gastro-Norm trays of the size GN 1/1 in
various versions:

3. OPERATION

3.1. OPERATING THE DOOR

The appliance has a door with a safety lock. It is very important that the door is always correctly operated.
Opening the door
The appliance can only be opened if the cooking
compartment is not under steam pressure.

After a cooking process has come to an end, an
acoustic signal is given. The door must not be
opened until after the signal has been given.

To open the door, the handle on the left side of the
appliance must be turned upwards from the
horizontal to the vertical position.

Afterwards, the locking handle must be fully pushed
to the left, causing the lock hook to snap out of the
locking device. The door can then be fully opened.
If the appliance is under steam pressure the locking
handle can be pushed to the left, but the hook remains
engaged. The door cannot be opened.
Do not turn the handle on the left side of the appliance
upwards (open) while the appliance is under steam
Closing the door

To close the door, the handle on the left side of the
appliance must be in a vertical position and the

door must be fully pushed closed.

Push the locking handle to the right to the stop. The
lock hook engages, the door is closed.

Turn the handle on the left side of the appliance from
the vertical to the horizontal position so that it points
forwards.
The door lock is not an automatic spring-loaded lock and
therefore the door cannot be slammed shut. If an attempt
is made to do so, the lock system will be damaged,
leading to failure of the appliance.

Depending on the type of food being cooked, perforated or
solid trays are used. The former are most frequently used
for steaming. Perforated trays for food from which the
water is to be removed (e.g. vegetables). Nonperforated
trays for food which is to remain moist (e.g. rice).

powerfully escape from the appliance, which could injure
the operator.
For some functions of the appliance the door needs not to
be closed. However, owing to the large amounts of steam
produced and in order to obtain optimal cooking results, it
is necessary to close the door for all cooking programs.
