The microwaves are electromagnetic
radiations that are also present in
nature in the form of light waves (e.g.
sunlight) and that, inside the oven,
go through food from any directions
and warm up the molecules of water,
fat, and sugar. The heat is produced
only in food very quickly, while the
container warms up only indirectly
for heat transfer from hot food. This
prevents the food from adhering to
the container, therefore it is possible
to use very little fat or to avoid its
use during the cooking process. The
microwave cooking is deemed to be
very healthy and dietetic since it is low
fat. Furthermore, in comparison with
the traditional systems, as cooking is
at a lower temperature, the food dehy-
drates less, does not lose its nutrients
and preserves its flavour more.
