a fitting end to our cookies section. But, that's
really not why we named them Aloha Apricot Squares.
The crunchy

us of Hawaii.
Premeasure
ingredient
groups (sift together
ingredient
Group D). Place in bowls near Bread Machine.
All ingredients
must be at room temperature.

1/2 cup butter/margarine
1 cup dark brown sugar, packed
1/4 cup granulated
sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup dried apricots, chopped into small pieces
1 cup chopped macadamia nuts or pecans
3/4 cup sweetened flaked coconut
1 1/3 cups unbleached all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
[] Place ingredient
Group A in pan. Press SELECT for
Mixing. Press START. Mix for I minute,
scraping
down
sides of bowl with spatula if necessary.
[] Add ingredient
Group B. Mix for 1 minute,
scraping
down sides of pan if necessary.
[] Add ingredient
Group C, then gradually add ingredient
Group D. Mix for 11/2 to 2 minutes
or until well blended,
scrapping down sides of pan if necessary. Press
CLEAR/STOP. Do not overmix.
[] Quickly and carefully remove the pan from the Bread
Machine and invert over a greased 13- by 9-inch pan.
Scrape batter into pan, spreading
evenly. Bake in
325°F preheated
oven 35 to 40 minutes,
until lightly
browned. Yield: 24 squares
